Actually, not everyone.  And if you’re in that latter group, it’s ok.  Some of us enjoy great food, but NOT making it.  That’s ok. But if you’d like to learn, this is about as easy as it gets to make a fast, REALLY healthy concoction that could very well make you a culinary hero genius with your friends! Take it to your next party and you’ll be a superstar!

If you have kids, get them involved with peeling bananas, mixing the fruit you cut, dribbling on sauces and other jobs you determine.  They’re actually more likely to eat foods that they help prepare.  So put them to work!  They’ll learn some skills along with you and reap the rewards of self accomplishment.

This is fun for just about everyone and cutting up fruits can bring out unexpected creativity.  You might find you have skill with a knife that can add some real flare to the look of your salad.  So experiment with different shapes when certain fruits cry out to you saying, “shape me, make me special!”  Ok, that’s overly dramatic, but just remember your circles, squares, triangles, stars, flowers, etc. You can even pick up a melon ball scoop at your local Walmart, Target or wherever kitchen utensils are sold.  And remember to use cookie cutters (that is, if you DO at least make cookies).

Here’s a simple recipe to follow from eatlocalgrown.com that will definitely please.  They call it “Nature’s Skittles!”  Remember though, you can embellish upon this recipe by adding or deleting fruits to meet your taste bud’s needs.  Also, use the general photos as inspiration for salad prep as well as final display/server ideas.

Rainbow Fruit Salad Recipe

Ingredients

2 ripe organic bananas

3 organic mandarin oranges, peel and section

4 organic kiwis peeled and sliced

1 lb of organic pineapple diced

6 oz of organic blackberries

12 oz of organic blueberries

1 lb of organic strawberries sliced

Honey Lime Dressing

1/4 cup of organic honey

2 tsp organic lime zest

1 Tbsp fresh lime juice

Directions For Bringing It All Together

  1. Mix all of the fruit in a bowl. Hint: Use a bigger bowl than you think you’ll need to keep ingredients from falling out while mixing. The best way to mix is to use your (super clean washed) hands. Be gentle to keep the fruit from breaking up.
  2. In a separate bowl, whisk together the honey, lime juice and lime zest. Taste the dressing (always taste!) before adding it to the salad. If you think it needs a little more zing or more sweetness now is the time to make your adjustments.
  3. Pour Honey lime dressing over fruit and toss (with your hands) until the fruit is evenly covered!
  4. Cover and refrigerate until ready to serve.

Can’t find an ingredient?

If you can’t find an ingredient or you’d rather focus on local seasonal fruits, adjust to your hearts content! Don’t stress on the getting the perfect ratios mentioned above- It’s just a FRUIT SALAD! Have fun, experiment.
